Spinach pie is delicious no matter how it’s served, and it’s no surprise that so many cultures have their own versions. My Albanian grandmother, Nena Adi, made her version of burek with a mix of spinach, leek, and dill. Every time she prepared it, the fragrant aroma filled the house. Her love for cooking and feeding others felt like a secret ingredient, and I came to associate that unmistakable scent with laughter, delicious meals, and time spent in her warm company.
In Adi’s home, hosting was simple yet special—a floral vinyl tablecloth, a dish fresh from the oven, a bottle of wine, and oversized bread pans filled with burek. Despite its simplicity, it always felt like the perfect dinner party because of her presence and hospitality.
My mother and I share that same love for cooking and hosting. Inspired by my grandmother’s influence, we’ve recreated her recipes while also crafting our own. Growing up my mom would save the more challenging recipes for weekends, joyfully heading to the store after a long work week to gather ingredients. Cooking became her perfect way to unwind, and those moments shaped some of my favorite memories.
We still carry on this tradition—an early Saturday grocery run (the earlier, the better), planning weekend meals, picking out flowers for a homemade arrangement, playing music, and cooking at our own pace.
These moments now feel even closer to Nena Adi. As we cook her spinach, leek, and dill recipe and the aroma fills the kitchen, I can almost see her in her own, head tilted back, hand on her stomach, basking in a belly laugh, and fully present in a way that was unmistakably her.
This is the feeling we aim to recreate and share with you: cooking meals that feel special, even on an ordinary day, offering modern hosting tips and ideas, and embracing the essence of being in Adi’s company—family, friendship, meals made with love, and plenty of laughter.
